Found "TecTile Programmable NFC Tags" from Samsung (see http://www.samsung.com/us/mobile/cell-phones-accessories/ETC-TT1G6NGSTA) which can be programmed to, amongst many other things, launch a chosen app when u hold the S3 against them.
So if u stick one on the car dock/cradle it could be made to launch your satnav app automatically - no buttons (if phone can still fit the dock with sticker in place else stick it close by!). I guess it can also initiate the S3's "driving mode" too - so u get text to speech on call/message notifications etc.
The app doesn't have to be running to activate behavior, though from the reviews people wish it would be capable of doing more things (like launch app and turn on bluetooth though the documentation seems to imply that u can - at least for 'phone settings':

I guess we need upgrade to firmware and the app for more flexibility. Maybe bigger capacity tags?
Thus u do have a mechanism of sorts to get your phone behaving as a sat nav device in the car with no fiddling about with buttons. Now to get rid of the fiddle of plugging in your charger with a true car dock...

Came across a mention of S3's (and S2's) "driving mode" settings in user manual which control things like
o provide audible notifications (Text-to-speech) for incoming calls, messages, or event details
o view the text of a new message received
So it reads new messages to you?
This mode seems to be initiated manually by u pressing the notifications panel (UM page 33/34), though in S2's its car dock must also have kicked it off on docking - hence my previous post mentioning it asking what u wanted to do after docking. Perhaps the S3 does too, if it has a car-dock (see other question on this very subject).
If the speech recognition side of "driving mode" works then its better than even the HTC's new car mode that gives u simplified landscape interface when u dock phone but its (fat) finger driven. Would be nice if S3's auto-launched on docking too though.
